Bacon Roasted Vegetables

6 medium potatoes, washed and cut in 1/2 in. slices
8 carrots, peeled and cut into 4in. pieces
2 medium onions, cut in half
1/4 cup of olive oil
1 Tbsp. garlic, chopped
1/4 tsp. ground red pepper
1/4 tsp. salt
8 oz. of bacon, fried crisp and crumbled

Preheat oven to 375 degrees. Lay vegetables in a greased 13x9 in. baking pan. Mix the oil and the seasonings in a small bowl and brush on the vegetables. Cover with foil and bake for 45 minutes. Remove foil, add bacon and continue baking uncovered for 15 minutes.
